2020 Hughes&Hughes “Pied de Cuve” Pinot Noir

Fruit from a single vineyard in the d’Entrecasteaux Channel (tinderbox).  A natural yeast starter was prepared in the vineyard a week prior to harvest, it was placed at the ‘foot of the tank’ (translation) and covered with 40% whole bunches with the balance whole berries. After 18 days with minimal pump overs it was pressed to and matured in oak for ten months (35% new). Bottled unfined and unfiltered. Only 1008 Bottles produced.

2020 Hughes&Hughes “50% Whole Bunch” Pinot Noir

Fruit from a single vineyard in the Coal River Valley (Clarence House). Clones 777 and 115 were fermented with 50% whole bunches atop whole berries for 21 days. Gently pumped over once a day while the ferment was most active (4-5 times in total). It was pressed to and matured in oak for ten months (30% new). Bottled unfined and unfiltered. Only 1992 bottles produced.

2019 Hughes&Hughes “25% Whole Bunch” Pinot Noir

Fruit from a single vineyard in the Tamar Valley. Fermented with 25% whole bunches, with the balance whole berry for 19 days. Pressed to and matured in oak for ten months (30% new). Bottled unfined and unfiltered.

2020 Hughes&Hughes “Lees Aged” Chardonnay 

Fruit from a single vineyard in the North West (White Rock). Whole bunch pressed directly to barrel where it was naturally fermented and matured (25% new). It underwent malolactic fermentation while lees ageing for ten months. Bottled unfined and filtered. Only 1164 bottles produced.

2019 Hughes&Hughes “barrel ferment” Riesling

Fruit from a single vineyard in the Coal River Valley, picked at 12.5 baume, soaked on skins for 24 hours and fermented in seasoned barrels with natural yeast. Half underwent malolactic ferment while maturing on lees. Bottled unfined and filtered.
